Marinated Steak Salad

INGREDIENTS:
- 1 pound lean flank steak
- Salt and pepper, to taste
- 4 thin slices red onion, separated into rings
- 1/4 cup chopped olives
- 1/4 cup fresh, finely chopped cilantro or parsley
- 2 tablespoons capers
- MARINADE
- 1/3 cup Crisco® Pure Corn Oil
- OR 1/3 cup Crisco® Puritan Canola Oil with Omega-3 DHA
- 3 tablespoons wine vinegar
- 1 tablespoon prepared mustard
- 1 1/2 teaspoons dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
PREPARATION DIRECTIONS:
1. HEAT broiler. Generously season flank steak with salt and papper. Broil 6 inches away from heat 6 to 8 minutes. Turn over; broil to medium rare, about 6 to 8 minutes. Let steak rest 10 minutes before slicing into thin slices across the grain.
2. SOAK red onion rings in cold water 10 minutes; drain and dry on a paper towel.
3. ARRANGE steak slices in a shallow dish. Top with with chopped olives, cilantro, capers and red onion.
4. WHISK together all marinade ingredients. Pour over steak mixture. Cover and refrigerate 2 to 3 hours.
5. To serve: LIFT salad out of marinade; arrange on lettuce leaves.
