Marinated Steak Salad

INGREDIENTS:

  • 1 pound lean flank steak
  • Salt and pepper, to taste
  • 4 thin slices red onion, separated into rings
  • 1/4 cup chopped olives
  • 1/4 cup fresh, finely chopped cilantro or parsley
  • 2 tablespoons capers
  • MARINADE
  • 1/3 cup Crisco® Pure Corn Oil
  • OR 1/3 cup Crisco® Puritan Canola Oil with Omega-3 DHA
  • 3 tablespoons wine vinegar
  • 1 tablespoon prepared mustard
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt

PREPARATION DIRECTIONS:

  1. 1.
    HEAT broiler. Generously season flank steak with salt and papper. Broil 6 inches away from heat 6 to 8 minutes. Turn over; broil to medium rare, about 6 to 8 minutes. Let steak rest 10 minutes before slicing into thin slices across the grain.

    SOAK red onion rings in cold water 10 minutes; drain and dry on a paper towel.

    ARRANGE steak slices in a shallow dish. Top with with chopped olives, cilantro, capers and red onion.

    WHISK together all marinade ingredients. Pour over steak mixture. Cover and refrigerate 2 to 3 hours.

    To serve: LIFT salad out of marinade; arrange on lettuce leaves.
