Shrimp and Ham Fried Rice

INGREDIENTS:

  • 5 tablespoons Crisco® Pure Vegetable Oil, divided
  • OR 5 tablespoons Crisco® Puritan Canola Oil with Omega-3 DHA
  • 1/2 teaspoon salt
  • 2 large eggs, beaten
  • 3 green onions, sliced
  • 1/2 cup shrimp, peeled, deveined and roughly chopped
  • 1/4 cup chopped ham
  • 4 cups cold, cooked rice
  • 1/2 cup frozen peas
  • 1/4 cup canned diced bamboo shoots
  • 2 tablespoons soy sauce
  • salt and pepper to taste
  • Additional sliced green onions for garnish

PREPARATION DIRECTIONS:

  1. 1.
    HEAT 1 tablespoon oil in a large skillet or wok over medium high heat. Whisk salt into beaten eggs. Add to pan. Cook until firm, breaking into small pieces. Remove and reserve. Add remaining oil to pan.

    ADD green onions, shrimp and ham. Cook until shrimp is pink. Break up cold cooked rice with a fork. Add to pan. Stir until rice is heated and the grains are separated.

  3. 3.
    Add peas and bamboo shoots. Stir until thoroughly heated and mixed.

  4. 4.
    Add soy sauce. Mix thoroughly. Add reserved cooked eggs. Season with salt and pepper to taste.

  5. 5.
    Garnish with green onion slices if desired. Serve with additional soy sauce if desired.
