Sunshine Cupcakes
INGREDIENTS:
- 1 (18.25 oz.) package Pillsbury® Reduced Sugar Yellow Cake
- OR Pillsbury® Reduced Sugar Lemon Cake
- 1/3 cup Crisco® Pure Canola Oil
- OR 1/3 cup Crisco® Puritan Canola Oil with Omega-3 DHA
- 1/2 cup water
- 3 large eggs
- 1 (12.75 oz.) jar Smucker's® Orange Sugar Free Marmalade, divided
PREPARATION DIRECTIONS:
1. HEAT oven to 350°F. Place 24 paper baking cups in muffin tins.
2. COMBINE cake mix, oil, water, eggs and 3/4 cup orange marmalade in large mixing bowl. Beat at medium speed of electric mixer for 2 minutes. Fill baking cups with a scant 1/4 cup batter.
3. BAKE 20 minutes or until toothpick inserted in center comes out clean. Cool completely on cooling rack.
4. SPREAD 1/2 teaspoon of remaining orange marmalade on top of each cupcake.
