Sausage and Potato Frittata

Cook Time: 30 minutes
Yield: Makes 5 servings

Ingredients:

1 (10 oz.) package pork sausage links
Crisco® Original No-Stick Cooking Spray
1/4 cup chopped onion (optional)
1/4 cup chopped green pepper (optional)
4 cups frozen shredded hash browns, thawed
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
4 large eggs
1/4 cup milk
1/2 cup shredded American cheese
1/2 cup shredded American cheese

Preparation Directions:

1. Cook sausage according to package directions.

2. Coat bottom of 10-inch skillet with no-stick cooking spray. Lay onions and green pepper evenly on bottom of skillet. Top with hash browns, patting to flatten. Sprinkle evenly with 1/2 tsp. salt and 1/2 tsp. pepper.

3. Cook over low heat 12 to 15 minutes or until underside is crisp and lightly browned.

4. Whisk together eggs, milk, 1/4 tsp. salt and 1/4 tsp. pepper. Pour evenly over potatoes. Arrange cooked sausage links in a spoke-like pattern in eggs. Cover and cook 8 minutes or just until eggs are set.

5. Sprinkle cheese evenly over top. Cover. Cook just until cheese melts. Serve immediately.
