Yield: Makes 6-8 servings
1 lb. bulk sausage
1 onion, chopped
1 or 2 jalapeño peppers, seeded and chopped
1 red pepper, seeded and chopped
2 cups shredded Cheddar cheese
1 cup Martha White® Self-Rising Corn Meal Mix
1 large egg, beaten
3/4 cup milk
1/4 cup Crisco® Butter Shortening
or 1/4 stick Crisco® Butter Shortening Sticks
1. Heat oven to 400°F.
2. In a 9-inch cast iron skillet over medium heat, cook sausage with onion, jalapeño peppers and red pepper. Drain and layer evenly on skillet bottom. Sprinkle with cheese. 3. In a medium bowl, combine corn meal mix, egg, milk and melted shortening. Beat until smooth. Pour batter over cheese. 4. Bake about 20 minutes or until golden. Let stand 5 minutes. Invert skillet on platter and serve immediately.
