For Sliders: HEAT olive oil in medium skillet over medium-high heat. Saute onion and corn until corn begins to soften. Place beans, brown rice, corn chips, cilantro and corn mixture into food processor or medium bowl. Pulse food processor 10 times or use potato masher to mash beans, just until mixture comes together. Shape mixture into 12 3-inch patties. Chill patties 30 minutes to develop flavors.
For dressing: WHISK mayonaise, cilantro, paprika, garlic and lime juice together. Gradually whisk in olive oil. Refrigerate until ready to use.
COAT 2 grill sheet pans* with no-stick cooking spray. Heat grill to medium-high. Grill patties 4 minutes per side or until warmed through. Or cook patties on an indoor grill pan or saute pan.
For Salad: Toss lettuce, radishes and green onion in a large bowl with 1/4 cup paprika dressing. Build slider stack by layering 1/4 of salad mixture under, between and on top of 3 sliders. Drizzle with additional paprika dressing. Garnish with jalapenos. Repeat with remaining sliders.
*BBQ foil grill sheet pans are vented aluminum sheets made for grilling, available at your grocer's in the aluminum pan section.
