STEP TWO ADD bread cubes a few at a time, processing until smooth after each addition, just until soup reaches desired consistency. Chill until cold.
STEP THREE PLACE soup into serving bowls. Sprinkle with egg and ham. Drizzle with olive oil, if desired.
