INGREDIENTS

  • 1 C. nopalitos (cactus paddles, cooked and sliced)
  • 1 C. shredded Mexican melting cheese like, queso quesadilla or Monterey Jack

DIRECTIONS

  1. For Dough: COMBINE masa flour, water, oil and salt in a medium bowl. Knead until pliable and soft. Divide into 8 portions. Roll each portion into a 5 1/2-inch round disk.
  2. For Filling: COMBINE nopalitos and cheese in a small bowl. Place 1/2 C. of mixture onto the center of 4 disks. Cover with another disk. Pinch edges to seal.
  3. HEAT skillet or griddle until hot. Cook sandwiches for 4 minutes on each side or until golden brown and crispy.
