INGREDIENTS

Quick Bread Mix (combine all ingredients)

  • 10 cups sifted all-purpose flour
  • 1/3 cup Clabber Girl® Baking Powder
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 2 cups Crisco® All-Vegetable Shortening

Muffins

  • 3 C. Quick Bread Mix
  • 1/4 C. sugar plus 3 tbsps.
  • 1 large egg
  • 2/3 C. milk
  • 1/2 C. applesauce
  • 1 tsp. Spice Islands® Ground Saigon Cinnamon
  • Butter

DIRECTIONS

  1. HEAT oven to 400ºF. Coat muffin pans lightly with no-stick cooking spray.
  2. COMBINE Quick Bread Mix and 3 Tbsp. sugar in large bowl. Combine egg, milk, and applesauce in separate bowl. Add all at once to dry ingredients. Stir just until moistened. Fill muffin pans 2/3 full.
  3. BAKE 20 to 25 minutes.
  4. COMBINE 1/4 C. sugar and Spice Islands® Ground Saigon Cinnamon. Dip hot muffins in melted butter, then in sugar-cinnamon mixture.
