INGREDIENTS

  • 1/4 C. Crisco® Butter Flavor All-Vegetable Shortening
  • 1/2 C. firmly packed brown sugar
  • 2 large eggs
  • 1 3/4 C. all-purpose flour
  • 2 tsp. Clabber Girl® Baking Powder
  • 1 tsp. Spice Islands® Ground Saigon Cinnamon
  • 1/2 tsp. salt
  • 1/2 C. milk
  • 1 C. peeled and finely chopped fresh apple
  • 1 C. fresh cranberries
  • 1/2 C. coarse sugar
  • 1/2 C. chopped pecans or walnuts

DIRECTIONS

  1. HEAT oven to 425ºF. Spray two 12-muffin pans with no-stick cooking spray.
  2. COMBINE shortening, brown sugar and eggs in medium bowl; beat at medium speed of electric mixer until light and fluffy.
  3. WHISK together flour, Clabber Girl® Baking Powder, Spice Islands® Ground Saigon Cinnamon and salt in small bowl. Add to shortening mixture. Add milk, apple and cranberries; stir just until blended.
  4. SPOON batter into muffin tins to three-quarters full. Sprinkle with coarse sugar and chopped nuts.
  5. BAKE 15 minutes or until toothpick inserted in center comes out clean. Cool 2 minutes in muffin pan. Serve warm.
