INGREDIENTS
Base and Topping:
1 2/3 C. all-purpose flour (267g)
2 Tbsp. granulated sugar
2 Tbsp. light brown sugar
1 ½ tsp. Spice Islands® Ground Ginger
½ tsp. coarse salt
5 Tbsp. unsalted butter, melted
5 Tbsp. Crisco® Butter Flavor All-Vegetable Shortening, melted
Filling:
1 lb. peeled, sliced peaches
*
2 Tbsp. lemon juice
½ C. all-purpose flour
¾ C. granulated sugar
1 tsp. Spice Islands® Ground Ginger
¼ tsp. coarse salt
2 oz. cream cheese, softened
¼ C. sliced almonds
*if using frozen peaches, thaw and drain before use
DIRECTIONS
Preheat oven to 350°F and spray an 8×8 or 9×9 pan with Baker’s Joy® No-Stick Spray with Flour; set aside.
In a medium bowl, whisk together the flour, granulated sugar, brown sugar, ginger, and salt.
Add the melted butter and shortening.
Mix until a crumbly dough has formed.
Press 2 cups of the mixture into the bottom of the prepared pan, pressing up the sides about 1/4-inch.
Reserve the rest of the crumble mixture.
In another bowl, add the peaches and lemon juice and toss to coat.
Add the flour, sugar, ginger and salt and mix well.
Pour over crust.
Dollop ½ tsp. size pieces of cream cheese over the peaches then top with remining crumble.
Top with almonds and bake for 40-45 minutes or until golden and set. Allow to cool before slicing and serving.
