INGREDIENTS

  • 1 C. buttermilk
  • 1 tsp. Clabber Girl® Baking Soda
  • 1 3/4 C. all-purpose flour
  • 1/3 C. packed light brown sugar
  • 2 tsp. Spice Islands® Pumpkin Pie Spice
  • 1 1/2 tsps. Clabber Girl® Baking Powder
  • 1/4 tsp. salt
  • 2 egg yolks
  • 1/2 C. canned pure pumpkin
  • 3 Tbsp. Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
  • 3 egg whites
  • breakfast syrup

DIRECTIONS

  1. WHISK buttermilk and Clabber Girl® Baking Soda in medium bowl to mix well. Set aside. Stir together flour, brown sugar, pumpkin pie spice, Clabber Girl® Baking Powder and salt in medium bowl until blended.
  2. BEAT 2 egg yolks, buttermilk mixture, pumpkin and melted shortening in large bowl until blended. Gradually stir in flour mixture, stirring just until blended.
  3. BEAT 3 egg whites in medium bowl with electric mixer on high speed until soft peaks form. Fold into waffle batter.
  4. COAT waffle iron with no-stick cooking spray and heat to medium temperature. Pour 1/2 C. batter onto waffle iron. Cook 3 to 4 minutes according to manufacturer’s directions or until golden brown. Remove from waffle iron. Repeat to cook remaining waffles. Serve with syrup.
