INGREDIENTS

  • 1 C. all-purpose flour
  • 1 Tbsp. salt
  • 1 1/2 tsps. black pepper
  • 1/2 tsp. Spice Islands® Garlic Powder
  • 1/2 tsp. ground red pepper
  • 3 eggs
  • 4 bone-in chicken breasts OR 10 chicken drumsticks OR 8 bone-in chicken thighs
  • 2 C. Crisco® Baking Sticks All-Vegetable Shortening

DIRECTIONS

  1. COMBINE flour, salt, pepper, garlic powder and red pepper in paper or resealable plastic bag.
  2. WHISK eggs in shallow bowl. Add chicken to flour mixture, 2 to 3 pieces at a time, shaking bag to coat completely. Dip in egg, then return to flour mixture to coat.
  3. HEAT shortening to 350°F in 12-inch skillet over medium heat.
  4. FOR BREASTS: Heat oven to 350°F. Add chicken to skillet. Cook, uncovered, 7 to 9 minutes per side until deep golden brown. Place wire rack on rimmed baking sheet. Transfer chicken to rack. Bake 28 to 30 minutes, turning once, until internal temperature reaches 180°F.
  5. FOR DRUMSTICKS: Add chicken to skillet. Cook, uncovered, 8 to 10 minutes per side until deep golden brown and internal temperature reaches 180°F. Drain on paper towels.
  6. FOR THIGHS: Add chicken to skillet. Cook, uncovered, 8 to 10 minutes per side until deep golden brown and internal temperature reaches 180°F. Drain on paper towels.
