Mini Meat Loaves with Mushroom Sauce

Ingredients
- 2/3 C. milk
- 2 large eggs
- 1/2 C. finely chopped onion
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 C. finely crushed herb-seasoned stuffing mix
- 2 lbs. ground beef
- MUSHROOM SAUCE
- 1/4 C. Crisco® Pure Canola Oil
- 8 oz. fresh mushrooms
- 1/2 C. sliced onion
- 1 (10 3/4 oz.) can condensed golden mushroom soup
- 1/2 C. sour cream
- 1/4 C. water
- Fresh parsley
Directions
- HEAT oven to 350ºF.
- SPRAY a shallow 2-quart baking dish with no-stick cooking spray. Combine milk, eggs, chopped onion, salt, pepper and stuffing in large bowl. Let stand 5 minutes. Add ground beef; mix well. Divide meat into 6 portions. Shape each into a mini loaf. Place in prepared pan.
- BAKE 40-45 minutes. Make sauce while meatloaves are baking.
- HEAT oil in a heavy skillet over medium heat. Add mushrooms and sliced onion. Cook 5 minutes, stirring frequently. Remove 1/2 C. mushrooms and onions; reserve for garnish. Add soup and sour cream. Stir gently to combine, adding water as needed to thin. Keep warm.
- ARRANGE meat loaves on serving platter. Spoon sauce over top. Garnish with reserved mushrooms and parsley, if desired.
