SPRAY a shallow 2-quart baking dish with no-stick cooking spray. Combine milk, eggs, chopped onion, salt, pepper and stuffing in large bowl. Let stand 5 minutes. Add ground beef; mix well. Divide meat into 6 portions. Shape each into a mini loaf. Place in prepared pan.
BAKE 40-45 minutes. Make sauce while meatloaves are baking.
HEAT oil in a heavy skillet over medium heat. Add mushrooms and sliced onion. Cook 5 minutes, stirring frequently. Remove 1/2 C. mushrooms and onions; reserve for garnish. Add soup and sour cream. Stir gently to combine, adding water as needed to thin. Keep warm.
ARRANGE meat loaves on serving platter. Spoon sauce over top. Garnish with reserved mushrooms and parsley, if desired.
