ADD shallot, lemon juice, mayonnaise, parsley, ketchup, pickle, capers, mustard, Worcestershire sauce and pepper in a food processor or blender. Pulse until just blended. Slowly add oil while pulsing several more times until blended.
STIR in amount of hot sauce to taste. Chill until ready to serve.
Serve with cooked and chilled chicken, shrimp, or other fish or seafood.
