
Almond Amaretto Quick Bread

Ingredients
- Baker’s Joy® Nonstick Spray with Flour
- 1 ½ C. all-purpose flour
- 1 C. granulated sugar
- ¾ tsp. salt
- ¾ tsp. Clabber Girl® Baking Powder
- ¾ C. 2% or whole milk
- ½ C. Crisco® Pure Canola Oil or Vegetable Oil
- 2 Tbsp. amaretto liqueur
- 2 eggs
- 1 tsp. Spice Islands® Pure Almond Extract
- 1 C. cranberries, fresh or frozen and thawed, optional
Directions
- Preheat oven to 325˚F and spray a 4-6 cup loaf pan with Baker’s Joy® Nonstick Spray with Flour; set aside.
- In a large bowl, whisk together the flour, sugar, salt and baking powder.
- In a medium bowl, whisk together the milk, oil, amaretto, eggs and almond extract until well blended.
- Pour the wet mixture into the dry mixture and gently fold to combine. Do not overmix.
- Fold in the cranberries if using.
- Bake for 1 hour to 1 hour 20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 15 minutes then invert the pan to remove the loaf and allow to fully cool on a wire rack.
- Garnish as desired.
