Crispy Chicken Tenders

Serves 15-18 tenders

  1. PLACE chicken and buttermilk in a resealable bag and refrigerate (minimum 2 hours, maximum 12 hours).
  2. COMBINE flour, salt, pepper, garlic powder and paprika in a medium bowl.
  3. ADD chicken to flour mixture, 2-3 pieces at a time, turning to coat completely. Using tongs, dip in buttermilk to coat. Return to flour mixture, turning to coat completely. Let stand on wire rack while heating shortening.
  4. HEAT shortening in a 10-inch skillet to 350°F. Add a few pieces of chicken (do not overcrowd) and cook for 3 minutes. Turn chicken and cook an additional 2-3 minutes or until deep golden brown and internal temperature reaches 165°F. Drain on paper towels. Repeat with remaining chicken.
