Grilled Peanut Butter Chicken

Ingredients
- 1/4 C. Crisco® Pure Canola Oil
- 1/4 C. creamy peanut butter
- 2 Tbsp. soy sauce
- 2 Tbsp. lime juice
- 1 Tbsp. rice vinegar
- 2 cloves garlic, peeled
- 1/2 tsp. crushed red pepper flakes
- 1 1/2 tsp. chopped fresh ginger
- 1 1/4 lbs. boneless skinless chicken breast
Directions
- COMBINE oil, peanut butter, soy sauce, lime juice, vinegar, garlic, red pepper flakes and ginger in blender container. Cover and process until smooth.
- PLACE chicken strips in large resealable plastic bag. Add marinade. Seal bag; turn bag to coat chicken. Chill at least 2 hours.
- COAT grill grate with no-stick cooking spray. Heat grill to medium-high heat. Place chicken on grill, discarding marinade. Cook 4 to 5 minutes per side or until internal temperature reads 165°F.
