  1. Preheat oven to 375° and spray a 12-cup muffin tin with no-stick spray
  2. With an electric mixer, cream together the shortening and sugars until creamy
  3. Scrape the sides of the bowl
  4. Add the egg and extract and blend well
  5. Add the flour, a little at a time, and blend on low until mixed
  6. Stir in 1 cup chocolate chips
  7. Scoop out into 3 tablespoon portions into the muffin tin
  8. Bake for 12 minutes then remove from the oven
  9. Use the back of a tablespoon to make a shallow indentation in each cookie
  10. Add the remaining chocolate chips, nuts and chopped PEEPS® to the cups and return to the oven for 1 minute
  11. Remove from the oven and top each one with a PEEPS® Delights™ S’Mores Flavored Marshmallow Chicks
  12. Allow to cool then remove from the muffin tin

Note: Use extreme caution when heating PEEPS® Marshmallow; they may be hot. Handle with care.
