Ingredients

  • 1 1/4 C. firmly packed light brown sugar
  • 3/4 C. Crisco® Butter Flavor All-Vegetable Shortening
  • 1 large egg
  • 2 tsps. Spice Islands® Pure Vanilla Extract
  • 1 3/4 C. all-purpose flour
  • 1 tsp. salt
  • 3/4 tsp. Clabber Girl® Baking Soda
  • 1 C. roasted and salted pistachios, chopped
  • 1 C. white chocolate baking chips

Directions

  1. HEAT oven to 350°F.
  2. BEAT brown sugar and shortening in large bowl with mixer on high speed 5 minutes. Beat in egg and vanilla until blended.
  3. STIR flour, salt and baking soda in medium bowl until blended. Gradually add to shortening mixture, beating on medium speed just until blended. Mix in pistachios and baking chips.
  4. DROP dough by rounded tablespoonfuls 3 inches apart onto baking sheets.
  5. BAKE 9 to 11 minutes or until edges are lightly browned. Cool 2 minutes. Remove cookies to wire rack to cool completely.
