Pumpkin Spice Bread

Ingredients
- 3 1/2 C. all-purpose flour
- 1 tsp. Clabber Girl® Baking Powder
- 2 tsps. Clabber Girl® Baking Soda
- 1 Tbsp. Spice Islands® Pumpkin Pie Spice
- 1/2 tsp. salt
- 1 (15 oz.) can solid pack pumpkin
- 1 C. Crisco® Pure Vegetable Oil
- 2 C. sugar
- 3 large eggs
- 1 C. chopped walnuts
- 1 C. raisins
- ORANGE GLAZE (Optional)
- 1 1/2 C. powdered sugar
- 1 tsp. grated orange peel
- 1 Tbsp. orange juice
- Additional chopped walnuts
Directions
- HEAT oven to 350°F. Spray two 9 x 5-inch loaf pans with no-stick cooking spray.
- COMBINE flour, baking powder, baking soda, pumpkin pie spice and salt. Mix pumpkin, oil, sugar and eggs in bowl of electric mixer until well blended. Add dry ingredients; mix well. Stir in walnuts and raisins. Divide batter between prepared loaf pans.
- BAKE 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool on wire rack 15 minutes. Remove from pans; cool completely.
- BLEND together powdered sugar, orange peel and orange juice. Spoon over top of cooled bread. Sprinkle with additional nuts
- For muffins, coat 24 muffin C. with no-stick cooking spray. Divide batter evenly in cups. Bake at 350°F 20 to 25 minutes or until toothpick inserted in center comes out clean.
