Strawberry Shortcake™ Lime Bars with White Chocolate

Ingredients

Crust

 

Lime Filling

  • 3 eggs
  • ½ C. granulated sugar
  • 1 Tbsp. all-purpose flour
  • 1 Tbsp. lime zest
  • 1/3 C. lime or key lime juice
  • 1/4 tsp. Clabber Girl® Baking Powder
  • 3-5 drops green food coloring, optional

 

White Chocolate Topping

Directions

Crust

  1. Preheat oven to 350˚ F.
  2. Spray an 8×8 pan with Baker’s Joy® No Stick Spray with Flour then line it in both directions with parchment paper that extends beyond the edges of the pan; set aside.
  3. In a large bowl, combine the flour, powdered sugar and brown sugar.
  4. Add the melted shortening and melted butter and stir until a dough is formed.
  5. Press the mixture evenly into the prepared pan and bake for 15 minutes.
  6. Allow to cool slightly while preparing filling.

 

Lime Filling

  1. In a medium bowl, whisk together the eggs, granulated sugar, flour, lime zest, lime juice, baking powder and food coloring (if using) until well blended.
  2. Pour over the baked crust.
  3. Return to a 350˚ F oven and bake for 20-22 minutes.
  4. Cool in the pan on a wire rack.

 

White Chocolate Topping

  1. In a microwave safe cup or bowl, combine the white chocolate chips and the shortening.
  2. Microwave for 30 seconds then stir.
  3. microwave for an additional 30 seconds and stir until smooth.
  4. Drizzle over the cooled bars.
  5. Cut into 12 bars and serve.
