White Chocolate Buttermilk Pie

Prep Time: 15 minutes + crust

Cook Time: 1 hour

Serves 6-8 slices

Ingredients

  • 1 pie crust for 9” pan, parbaked
  • 1 ½ C. granulated sugar
  • 1 ½ Tbsp Clabber Girl® Corn Starch
  • 6 Tbsp. butter, melted and cooled
  • 2 eggs
  • 1 egg yolk
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • ¾ C. whole buttermilk
  • 2 tsp. Spice Islands® Lemon Peel
  • ½ C. white chocolate, chopped
  • 2 Tbsp. heavy cream

Directions

  1. Prepare pie dough and place in 9” pie pan as desired. Parbake and set aside to cool.
  2. Preheat oven to 325° F
  3. In a microwave safe container, mix the white chocolate and heavy cream. Microwave in 30 second increments, stirring each time, until the chocolate is melted and the mixture is smooth; set aside.
  4. In a medium bowl, whisk together the sugar and corn starch.
  5. Add the melted butter, eggs, egg yolk, and vanilla and stir until well blended.
  6. Add the buttermilk, lemon peel, and melted white chocolate.
  7. Blend well and pour into crust.
  8. Bake for 50-60 minutes or until set.
  9. Remove from oven and allow to cool on a wire rack.
