Almond Butter Cookies with Chocolate

Ingredients

  • 1 C. all-purpose flour
  • 1/4 tsp. Clabber Girl® Baking Powder
  • 1/4 tsp. Clabber Girl® Baking Soda
  • 1 tsp. salt
  • 8 Tbsp. (1 stick) Crisco® All-Vegetable Butter Flavor Shortening
  • 1/2 C. brown sugar
  • 1/2 C. granulated sugar
  • 1/2 C. almond butter
  • 1 large egg
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • 1/2 C. almond flour
  • 1/4 C. dark chocolate, melted
  • 3 Tbsp. sliced almonds
  • Flaky sea salt

Directions

  1. Preheat your oven to 350° F.
  2. Add the all purpose flour, baking soda, baking powder, salt, and almond flour into a medium bowl and set aside.
  3. Add the shortening and sugars into a bowl and mix for 2-3 minutes on medium speed.
  4. Add the egg and vanilla extract, beating until combined before continuing.
  5. Add the almond butter until incorporated, then add the dry ingredients in two stages, mixing until completely combined.
  6. Roll out the dough between two pieces of parchment paper and cut out your cookie shapes using the cookie cutters of your choosing!
  7. Then place on a cookie sheet lined with parchment paper and bake cookies for 10-12 minutes.
  8. The edges of the cookies will be lightly browned – pull the cookies out of the oven. After 2-3 minutes, move the cookies onto a cooling rack until cooled.
  9. Drizzle melted chocolate on the cooled cookies, add sliced almonds, melted chocolate and finally a touch of flaky sea salt before enjoying!
