Mexican Chocolate Waffles

Ingredients
- 1 C. all-purpose flour
- 1/4 C. unsweetened cocoa powder
- 3 Tbsp. sugar
- 1 1/4 tsp. Spice Islands® Ground Saigon Cinnamon
- 1 tsp. Clabber Girl® Baking Soda
- 1 tsp. Clabber Girl® Baking Powder
- 1/2 tsp. Spice Islands® Cayenne Pepper
- 1/2 tsp. salt
- 1 C. plus 2 Tbsp. buttermilk
- 1 large egg
- 3 Tbsp. Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
- 1 C. semi-sweet chocolate chips
- Fresh fruit, such as sliced strawberries or sliced banana
- 1 (14 oz.) can sweetened condensed milk
Directions
- COMBINE flour, cocoa powder, sugar, cinnamon, baking soda, baking powder, cayenne pepper and salt in medium bowl, stirring until well blended.
- BEAT egg white in medium bowl with electric mixer on high speed until stiff. Whisk buttermilk and egg yolk in a separate bowl until blended.
- MAKE a well in center of flour mixture. Add shortening and buttermilk mixture, stirring until thoroughly moistened. Stir in chocolate chips. Fold in beaten egg white.
- COAT waffle iron with no-stick cooking spray and heat to medium temperature. Spoon or ladle batter onto waffle iron. Cook 3 to 4 minutes according to manufacturer’s directions, or until golden brown. Remove from waffle iron. Repeat to cook remaining waffles. Serve topped with fresh fruit, if desired. Drizzle with sweetened condensed milk.
