INGREDIENTS

DIRECTIONS

  1. COMBINE plantains, shortening, brown sugar and vanilla in medium saucepan. Add just enough water to cover plantains. Bring to a boil over medium heat. Reduce heat to low; cover and simmer 20 minutes or until plantains are very soft.
  2. REMOVE plantains with slotted spoon; place in medium bowl. Add lime juice, salt and pepper. Mash or beat with electric mixer on medium speed to desired consistency.
