
Apple Cardamom Cake

Ingredients
Cake:
- Bakers’ Joy® Nonstick Baking Spray with Flour
- 3 C. all-purpose flour
- 2 tsp. Clabber Girl® Baking Soda
- 1 tsp. Clabber Girl® Baking Powder
- 2 tsp. Spice Islands® Ground Saigon Cinnamon
- 1 tsp. Spice Islands® Ground Cardamom
- 1 ½ C. granulated sugar
- ½ C. brown sugar
- 1 C. Crisco® All-Vegetable Shortening
- 3 large eggs
- 2/3 C. sour cream
- 2 C. grated apple
- 1 C. chopped, toasted pecans
Frosting:
- 1 C. Crisco® All-Vegetable Shortening
- 1 C. butter, softened
- 8 C. powdered sugar
- 1 Tbsp. Spice Islands® Ground Saigon Cinnamon
- 1 tsp. Spice Islands® Ground Cardamom
- ¼ tsp. salt
- 1 Tbsp. Spice Islands® Pure Vanilla Extract
- 4-6 Tbsp. heavy cream
Directions
Cake:
- Preheat oven to 375°F and spray 3-8-inch cake pans with Baker’s Joy® Nonstick Baking Spray with Flour; set aside.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon and cardamom; set aside.
- In the bowl of a mixer, combine the granulated sugar, brown sugar and shortening. Gradually increase the speed to high and beat for 5 minutes.
- Scrape the sides of the bowl and add the eggs and sour cream.
- Mix on medium speed for 1 minute or until thoroughly combined.
- Scrape the sides of the bowl again.
- With the mixer on low speed, slowly add the flour mixture.
- When all the flour is nearly blended in, add the apples and pecans and gently stir to combine.
- Pour the batter evenly into the three prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pans for 15 minutes before running a knife around the edges and inverting the cakes onto a wire rack to cool completely.
Frosting:
- In the bowl of a mixer, combine the shortening and butter.
- Gradually increase the speed to high and beat for 5 minutes.
- Add half the powdered sugar, a cup at a time, and blend.
- Add the cinnamon, cardamom, salt and vanilla and blend.
- Add the remaining powdered sugar on low speed then add the heavy cream, one tablespoon at a time until the frosting reaches your desired consistency.
- Whip the frosting on medium-high speed for 3 minutes.
- Use to frost cooled cakes.
