Ginger Peach Bars

Ingredients
Base and Topping:
- 1 2/3 C. all-purpose flour (267g)
- 2 Tbsp. granulated sugar
- 2 Tbsp. light brown sugar
- 1 ½ tsp. Spice Islands® Ground Ginger
- ½ tsp. coarse salt
- 5 Tbsp. unsalted butter, melted
- 5 Tbsp. Crisco® Butter Flavor All-Vegetable Shortening, melted
Filling:
- 1 lb. peeled, sliced peaches*
- 2 Tbsp. lemon juice
- ½ C. all-purpose flour
- ¾ C. granulated sugar
- 1 tsp. Spice Islands® Ground Ginger
- ¼ tsp. coarse salt
- 2 oz. cream cheese, softened
- ¼ C. sliced almonds
*if using frozen peaches, thaw and drain before use
Directions
- Preheat oven to 350°F and spray an 8×8 or 9×9 pan with Baker’s Joy® No-Stick Spray with Flour; set aside.
- In a medium bowl, whisk together the flour, granulated sugar, brown sugar, ginger, and salt.
- Add the melted butter and shortening.
- Mix until a crumbly dough has formed.
- Press 2 cups of the mixture into the bottom of the prepared pan, pressing up the sides about 1/4-inch.
- Reserve the rest of the crumble mixture.
- In another bowl, add the peaches and lemon juice and toss to coat.
- Add the flour, sugar, ginger and salt and mix well.
- Pour over crust.
- Dollop ½ tsp. size pieces of cream cheese over the peaches then top with remining crumble.
- Top with almonds and bake for 40-45 minutes or until golden and set. Allow to cool before slicing and serving.
