Grilled Pineapple with Coconut and Lime

Ingredients
- 1 whole fresh pineapple
- 1/4 C. Crisco® Pure Canola Oil
- 1 lime
- 1/2 C. flaked sweetened coconut
- Vanilla ice cream
Directions
- HEAT grill to medium high. Peel and core pineapple. Cut into 8 rings. Brush both sides of each ring with oil.
- GRILL pineapple on both sides, turning only once, until golden brown. Cut lime in half or quarters. Squeeze juice over pineapple rings. Sprinkle with coconut. Cool slightly. Serve with vanilla ice cream.
