Ham and Sauerkraut Balls

Ingredients
- 2 Tbsp. Crisco® Butter Flavor All-Vegetable Shortening
- 1/4 C. minced onion
- 1/2 C. all-purpose flour
- Dash Spice Islands® Garlic Powder
- Dash Spice Islands® Cayenne Pepper, or to taste
- 8 oz. baked ham, finely chopped
- 1 (8 oz.) can sauerkraut
- 1/2 C. finely shredded Swiss cheese
- 3 large eggs, divided, slightly beaten
- 2 Tbsps. snipped fresh parsley
- Crisco® Butter Flavor All-Vegetable Shortening
Directions
- MELT shortening in small skillet. Add onion; cook and stir over medium heat until tender. Stir in 3 Tbsp. flour, garlic powder and cayenne. Cook until mixture thickens, stirring constantly.
- TRANSFER mixture to medium bowl. Add ham, sauerkraut, cheese, one beaten egg and parsley. Mix thoroughly. Refrigerate at least 30 minutes.
- HEAT 2 to 3 inches shortening to 375ºF in deep-fat fryer or deep saucepan. Shape ham mixture by rounded tablespoonfuls into balls. Roll in remaining 1/2 C. flour to coat. Roll in 2 beaten eggs. Roll again in flour. Fry a few at a time in hot oil 2 to 2 1/2 minutes, or until golden brown. Drain on paper towels. Serve immediately or keep warm in 175ºF oven.
- To make a day ahead, prepare and fry as directed. Cool. Cover and refrigerate. Reheat in single layer on baking sheet at 425ºF for 8 to 10 minutes, or until hot.
