
Vegetable Latkes

Serves 9 latkes
Ingredients
- 1 – 10.5 oz. pkg. Green Giant® Restaurant Style Veggie Sides Asparagus, Roasted Red Potatoes & Onions
- 1 large egg, beaten
- 3 Tbsp. all-purpose flour
- ¼ tsp. dried dill
- Crisco® All-Vegetable Shortening, for frying
- Sour cream, for serving
- Chives or green onions, for garnish
Directions
- Prepare the veggies according to the package directions.
- When done, pour vegetables into a medium bowl.
- Use a large fork to mash the vegetables with the focus being on mashing the potatoes.
- To the vegetables, add the beaten egg, flour and dill.
- Stir until well blended.
- In a large skillet, heat enough shortening to have ¼-inch deep oil when melted.
- Heat over medium-high heat to around 350-360°F.
- Scoop out approximately 2 tablespoons of veggie mixture and place it in the skillet.
- Use a spatula to gently press the mixture down to about 1/4 -inch thick.
- Add more latkes to the skillet, but do not overcrowd.
- Cook each for 2-3 minutes per side or until golden brown and crispy.
- Drain on a paper towel.
- Serve with sour cream and green onions.
