White Chocolate Buttermilk Pie
Prep Time: 15 minutes + crust
Cook Time: 1 hour
Serves 6-8 slices
Ingredients
- 1 pie crust for 9” pan, parbaked
- 1 ½ C. granulated sugar
- 1 ½ Tbsp Clabber Girl® Corn Starch
- 6 Tbsp. butter, melted and cooled
- 2 eggs
- 1 egg yolk
- 2 tsp. Spice Islands® Pure Vanilla Extract
- ¾ C. whole buttermilk
- 2 tsp. Spice Islands® Lemon Peel
- ½ C. white chocolate, chopped
- 2 Tbsp. heavy cream
Directions
- Prepare pie dough and place in 9” pie pan as desired. Parbake and set aside to cool.
- Preheat oven to 325° F
- In a microwave safe container, mix the white chocolate and heavy cream. Microwave in 30 second increments, stirring each time, until the chocolate is melted and the mixture is smooth; set aside.
- In a medium bowl, whisk together the sugar and corn starch.
- Add the melted butter, eggs, egg yolk, and vanilla and stir until well blended.
- Add the buttermilk, lemon peel, and melted white chocolate.
- Blend well and pour into crust.
- Bake for 50-60 minutes or until set.
- Remove from oven and allow to cool on a wire rack.
