INGREDIENTS

  • 3 medium plum tomatoes, quartered
  • 1/3 C. coarsely chopped onion
  • 1/4 C. loosely packed fresh cilantro leaves
  • 1 canned chipotle pepper in adobo sauce, coarsely chopped
  • 2 Tbsps. Crisco® Pure Canola Oil
  • 2 Tbsps. fresh lime juice
  • 1/2 tsp. minced fresh garlic
  • 1/2 tsp. salt

DIRECTIONS

  1. PLACE tomatoes in food processor. Cover and pulse until coarsely chopped. Drain, if desired, discarding excess liquid.
  2. PLACE, onion, cilantro, chipotle pepper. oil, lime juice, garlic and salt in food processor. Cover and pulse until chopped. Stir in chopped tomatoes. Serve with grilled meats, grilled seafood or snack chips.
  3. Canned chipotle peppers in adobo sauce can be found in the Hispanic foods section of most supermarkets.
