Country Chicken and Creamy Gravy

Ingredients
COUNTRY CHICKEN
- 4 (6 oz.) boneless, skinless chicken breasts (about 1 1/2 pounds)
- 3/4 tsp. seasoned salt
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. crushed thyme leaves
- 1/2 C. corn flake crumbs
- 1/4 C. Crisco® Pure Vegetable Oil
CREAMY GRAVY
- 3 Tbsps. Crisco® Pure Vegetable Oil
- 1/4 C. all-purpose flour
- 1/4 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 (12 oz.) can evaporated milk
- 3/4 C. chicken broth
- 3 Tbsps. chopped fresh chives
Directions
- For Country Chicken: POUND chicken breasts to even 1/2-inch thickness. Combine seasoned salt, pepper and thyme; sprinkle evenly over each side of chicken breasts. Coat with corn flake crumbs.
- HEAT oil in large skillet over medium heat until hot. Sauté chicken 3 to 4 minutes per side or until instant-read thermometer reaches 165°F. Transfer chicken to serving platter. Keep warm.
- For Creamy Gravy: WHISK oil, flour, salt and pepper in medium saucepan over medium-high heat. Whisk in milk and broth until mixture is smooth and bubbly. Remove from heat. Stir in chives; serve over warm chicken.
