
Crispy Fried Cornflake Chicken with Pimento Cheese Sandwich

- 6-8 chicken breasts, cut to about the size of a sandwich bun
- 6-8 buns
- 1 /2 cups flour
- 1 tsp of salt
- 1 tsp of Spice Islands® Black Pepper
- 1 tsp of Spice Islands Garlic Powder
- 2 eggs
- 1 cup milk
- 2 cups crushed cornflakes
- 1/4 cup Crisco® All-Vegetable Shortening
- 1 cup pimento cheese
Directions
- Start by prepping your dipping stations. Set up one dish with flour, salt, pepper, and garlic powder. Set up your second dish with 2 eggs, beat with milk. Set up your third dish with crushed cornflakes.
- Dip each chicken breast in the flour mixture, milk, and then cornflakes. Set them aside.
- Once all chicken breasts are prepped, heat up the Crisco over medium heat for about 10 minutes.
- Add the chicken breasts 1-3 at a time. Fry them for 5-6 minutes on each side, until golden brown and crispy. Cook the chicken until it reaches 165˚internally. If the outsides are starting to get too brown but the inside is still not fully cooked (this can happen with thicker pieces of chicken), you can remove from the pan and bake in the oven at 375˚on a foil-lined cookie sheet for a few extra minutes.
- Top the chicken with a dollop of pimento cheese and serve on a bun.
