Double Fried Fries with Smoky Paprika Dipping Sauce

Fries:

  1. Peel potatoes and cut into ¼-inch sticks.
  2. Place in a large bowl and cover with water.
  3. Add the vinegar and stir.
  4. Allow the potatoes to soak at room temperature for 30 minutes (refrigerate if they are soaking longer than 30 minutes).
  5. Drain the potatoes and place them on a paper towel-lined baking sheet.
  6. Sprinkle with 1 teaspoon of salt and allow to rest for 5 minutes.
  7. Use a clean paper towel to dab off any salt and water.
  8. Add Crisco® All-Vegetable Shortening to a deep fryer.
  9. Set temperature to 325°F.
  10. Carefully add the fries to the hot oil and cook for 3 minutes.
  11. Remove with a slotted spoon and place on a paper towel-lined baking sheet.
  12. Turn fryer temperature up to 375°F and allow to preheat.
  13. Add the par-cooked fries to the hot oil and cook an additional 4-6 minutes or until golden brown.
  14. Drain on paper towel and sprinkle with salt.
  15. Serve with dipping sauce, if desired.

 

Sauce:

  1. Mix all three ingredients together until well blended. Store in the refrigerator.

HELPFUL TIPS

If you refrigerate the soaking potatoes (up to 24 hours), after step 7, let them come close to room temperature before frying.
