
Fried Chicken Summer Salad with Maple Lemon Dressing

Ingredients
Chicken:
- 24-36 oz. boneless, skinless chicken breasts
- 1 ½ C. buttermilk
- ¼ C. Weber® N’Orleans Cajun Seasoning, divided
- 1 ½ C. all-purpose flour
- Crisco® All-Vegetable Shortening
Maple-Lemon Dressing:
- ¼ C. Spring Tree® 100% Pure Maple Syrup
- ¼ C. red wine vinegar
- 2 tsp. fresh lemon juice
- 2 tsp. Dijon mustard
- ¼ tsp. Spice Islands® Garlic Powder
- 1/8 tsp. Spice Islands® Onion Powder
- 2/3 C. extra virgin olive oil
Salad:
- 5 oz. mixed greens
- 2 C. sliced strawberries
- 2 C. blackberries
- 1 ½ C. blueberries
- 6 oz. goat cheese, crumbled
- ¾ C. toasted pecans or walnuts
Directions
Chicken:
- Cut the chicken into bite-sized pieces and place it in a sealable container or bag.
- Whisk together the buttermilk and 2 ½ tablespoons of the N’Orleans Seasoning.
- Pour the buttermilk over the chicken and marinate in the refrigerator for 2 hours or overnight.
- In a shallow dish, whisk together the flour and remaining N’Orleans Seasoning.
- Remove the chicken from the marinade and shake off any excess buttermilk.
- Dip the chicken in the flour mixture and coat with flour. Shake off any excess and set aside on a baking sheet.
- Repeat until all the chicken is breaded.
- In a heavy-bottomed saucepan or skillet, heat enough shortening to reach ½-inch deep oil.
- Heat over medium-high heat (375°F).
- Add chicken pieces and fry until they reach an internal temperature of 165°F.
- Fry in batches to avoid overcrowding the pan.
- Drain fried chicken on a paper towel-lined baking sheet.
Dressing:
- In a bowl, whisk together the maple syrup, vinegar, lemon juice, mustard, garlic powder and onion powder until well blended.
- Drizzle in the oil while whisking until it is blended.
- Store in a jar in the refrigerator until ready for use.
- Whisk or shake just before serving.
Salad:
- Divide the mixed greens, strawberries, blackberries, blueberries, goat cheese and walnuts among 6 dishes.
- Top each with pieces of fried chicken.
- Serve with the Maple-Lemon Dressing.
