Game Day Peanut Butter Cookies

Ingredients
- 1 C. sugar
- 1 C. firmly packed light brown sugar
- 3/4 C. creamy peanut butter
- 1/2 C. Crisco® All-Vegetable Shortening
- 2 large eggs
- 2 Tbsp. milk
- 1 tsp. Spice Islands® Pure Vanilla Extract
- 1 C. all-purpose flour
- 1 tsp. Clabber Girl® Baking Powder
- 1 tsp. Clabber Girl® Baking Soda
- 1 1/2 C. McCann’s® Quick Cooking Rolled Irish Oats
- 1 C. sweetened coconut flakes
- 1 C. chopped pecans or walnuts
Directions
- HEAT oven to 350°F.
- BEAT sugar, brown sugar, peanut butter and shortening in large bowl with mixer on medium-high speed until creamy, about 5 minutes. Beat in eggs, milk and vanilla until smooth.
- STIR flour, baking powder and baking soda in medium bowl until blended. Stir in oats, coconut and nuts. Add to peanut butter mixture. Beat on low speed until well blended.
- DROP dough by rounded tablespoonful, 2 inches apart, onto baking sheets. Bake 10 to 11 minutes or until edges are lightly browned. Cool on baking sheet 2 minutes. Remove to wire rack to cool completely.
