Garlic-Marinated Skirt Steak

Ingredients

  • 1/2 C. orange juice
  • 1/4 C. fresh lime juice
  • 8 to 10 cloves garlic, peeled
  • 2 tsps. dried oregano leaves
  • 1 tsp. salt
  • 3/4 C. Crisco® Pure Vegetable Oil
  • 2 lbs. beef skirt steak
  • 3/4 C. finely chopped red onion

Directions

  1. COMBINE orange juice, lime juice, garlic, oregano and salt in blender container. Cover and process until smooth. Gradually blend in oil.
  2. PLACE steak and onion in large resealable plastic bag. Pour marinade into bag. Seal bag; turn bag to coat steak. Chill at least 2 hours or overnight.
  3. COAT grill grate with no-stick cooking spray. Heat grill to medium-high heat. Place steaks on grill, discarding marinade. Cook 3 minutes per side for medium-rare; 5 minutes per side for well done. Cut steak crosswise into thin strips before serving.
