Spice Coffee Cake Cookies

Ingredients

Streusel:
- 3 Tbsp. brown sugar
- 2 ½ Tbsp. granulated sugar
- ½ C. all-purpose flour
- 2 ½ tsp. Spice Islands®️ Ground Saigon Cinnamon
- 3 ½ Tbsp. Crisco®️ All-Vegetable Shortening
Cookie Dough:
- 6 Tbsp. Crisco®️ All-Vegetable Shortening
- ¾ C. packed brown sugar
- 2 Tbsp. granulated sugar
- ½ Tbsp. Grandma’s®️ Molasses
- 1 tsp. Spice Islands®️ Pure Vanilla Extract
- 2 large eggs
- 2 1/3 C. all-purpose flour
- 1 tsp. Clabber Girl®️ Baking Soda
- ¼ tsp. salt
- 1 ½ C. semi-sweet chocolate chips
- additional semi-sweet chocolate chips for topping and garnish
Icing:
- ¼ C. powdered sugar
- 2 tsp. half & half
Directions
Streusel
- Begin by making the streusel. In a bowl, add sugars, flour, cinnamon and shortening. Using a spoon or very clean hands, mix until combined and a sandy consistency. Refrigerate for 1-2 hours.
- Preheat oven to 350°F.
Cookie Dough
- In a separate bowl using a hand mixer on med-high speed, beat the shortening and sugars for 3-4 minutes until combined and smooth.
- Add molasses, vanilla and then the eggs, one at a time, mixing in between. Do not overmix – just until combined.
- In a separate bowl, sift the flour, spices, baking soda and salt into the bowl and mix until combined.
- Add sifted flour to the egg mixture and mix until combined – do not overmix.
- Add 1 ½ cups chocolate chips and mix until combined.
- Scoop the dough with an ice cream scoop and press down with the palm of your hand to flatten the cookie 75% of the way. Add more chocolate chips and 1 tablespoon of streusel.
- Repeat until all the cookie dough is used.
- Bake 6 at a time on a parchment-lined baking sheet for 10 minutes per batch.
- Place a large cup over each cookie while they are still warm and gently swirl around the edges to fix the shape.
- Add more chocolate chips and refrigerate any leftovers for up to 5 days.
Icing
- Combine the two ingredients and stir until smooth. Drizzle over baked cookies.
- Keep leftover cookies refrigerated for up to 5 days.
