Arepas with Black Beans

Ingredients
- 1 1/2 C. arepa flour*
- 1 C. shredded mozzarella cheese
- 1 Tbsp. sugar
- 1 tsp. salt
- 1 1/2 C. milk
- 1/4 stick Crisco® Baking Sticks All-Vegetable Shortening
- 2 to 3 Tbsp. Crisco® Pure Vegetable Oil
- 1 (15 oz.) can seasoned black beans
- 1 C. crumbled queso fresco
Directions
- HEAT oven to 300°F. Combine flour, mozzarella cheese, sugar and salt in large bowl. Microwave milk and shortening in medium microwave-safe bowl on HIGH 2 minutes or until mixture just begins to boil. Stir into flour mixture until blended. Knead on lightly floured surface until dough is smooth, about 2 minutes. Shape dough into 10 (2 1/2-inch) patties.
- HEAT oil in large nonstick skillet over medium-low heat. Cook arepas in batches, 4 to 5 minutes on each side, until crispy and golden brown. Place on ungreased baking sheet. Bake 10 minutes. Split in half horizontally. Fill with black beans and queso fresco.
- * Arepa flour is a precooked corn flour. It should not be confused with masa harina. Arepa flour is sold as masarepa, harina precocida or masa al instante. It can be found in Latin American groceries.
